Gluten Free Risotto


Our family has become quite fond of this brand of risotto.  Lundberg Farms has several varieties from which to choose.  It is best served piping hot from the stove or microwave.  It makes a great side dish to chicken!  I buy it in bulk from www.amazon.com.

Can you say yum?

This is our favorite gluten free brownie mix.  It is called chocolate truffle brownie mix by Gluten Free Pantry.  I have seen these in the local health food stores but I buy ours from www.amazon.com.

Breakfast Bars

These cereal bars are our favorite portable gluten free breakfast or snack.  I have found these at our local grocer, health food store, and online at www.amazon.com.  These always go with us on trips when we aren't sure if we will have breakfast options.  My kids had these (different flavors) every day for breakfast during summer camp.  These come in berry (my favorite), chocolate, and peanut butter (kids favorite).

Easy Lasagna

Debole's Rice Lasagna noodles are my favorite.  They require no boiling and you can just put them in the pan with your other ingredients and go.  I honestly can't tell the difference between these noodles and the ones we used to eat before going gluten free.  I can find these at my local grocer, my local wal-mart, and online at amazon.  I use these with 2 jars of gluten free Spaghetti sauce like Prego Traditional or Walmart's traditional flavor.  I also use 1 egg, 16 oz of cottage cheese, 1 pound ground beef, and 1 pound of grated mozzarella (walmart).  This turns out really good and my non-celiac husband even packages up leftovers to put in the freezer to have for his lunches during the week.

Man shall not live by bread alone.

And when you have celiac disease, that is a very good thing.  I do enjoy the occasional sandwich and toast and for that I have narrowed down our choice of bread to three types of bread.  We prefer our sandwiches to be made using Pamela's Wheat Free Bread Mix.  We make a loaf of this bread every other day.  That is what works for us 3 celiacs.  For people who are only eating the bread themselves....you can slice and freeze and then use as needed.  It is the most moist gluten free bread I have found and is the most similar to glutenous bread that I have tried.  By the way, I have tried a lot.  I've made my own from scratch, bought many, many varieties of g.f. bread available at the local health food store and this is still my favorite.  Before you email me, yes, I have also had the fresh ones from places like Whole Foods Markets, etc.  I am working on coming up with my own recipe for this bread so I don't have to keep buying the mix.    I also use this mix for rolls and french bread.

I make this is my Zojirushi Bread Machine.  It is programmable and I programmed it according to the mix suggestions at Pamela's website.  I bought mine new from a wholesaler on EBAY much cheaper than retail.  I like that it bakes horizontal instead of with vertical pans.  It also has two paddles which I really like.  I have had two bread machines in my lifetime and this is my favorite.

When we go on vacation though and do not have our bread machine, we take along Kinnikinnick frozen white sandwich bread. I buy this bread at my local health food store.  You can check with kinnikinnick for local places that carry it in your neck of the woods.  http://www.kinnikinnick.com .  This company also has hot dog buns, hamburger buns, pizza crusts, and other such goodies. 

I also take along my trusty toaster bags to keep my toast from getting contaminated in other people's toasters.  Not everyone has a separate gluten free toaster in their home like we do.  I found my toaster bags at a kitchen store in one of those outlet malls.  I have seen them for sale also on Amazon and different other websites.  They are reusable and last a long time. 

    

For the special little tea parties with my celiac daughter we use Food For Life's Raisin Pecan Bread (must say this is good also as toast with some cream cheese-makes me reminisce of my raisin bagel breakfast days in college).  I find this at my local health food store.  You can check with food for life for stores near you.  http://www.foodforlife.com/
